Spring Greens and Mixed Fruit Salad with Poppy Seed Dressing


I think I should start by saying that salad is my favorite food. Now, when I say favorite, I think I really mean it is my favorite way to get all of my actual favorite foods together in one place. Greens are the perfect vehicle for pretty much anything you can think of.

One reason I love creating and making salads is because, in my opinion, you can't go wrong. Take some leftovers from the fridge, throw them on a bed of lettuce, top it with your fave dressing and you have a perfect meal! The reason I wanted to make this salad in particular because I saw the first nectarines of the season in the store and I needed to have them with my Brianna's Home Style Poppy Seed Dressing. I have made this salad with a ton of different fruits and have never had a bad batch. This variation in particular is sweet, crunchy, savory, tart, and all together delicious! You could grill up some chicken breast to put on this and it would be a filling main course for sure!



For the fruits in this recipe I used green grapes, nectarines, and granny smith apples but don't limit yourself to that! I have used strawberries, raspberries, mangoes, pears, all types of grapes, cranberries, pomegranate, you name it and I've probably used it in this salad. I usually try to add at least one crunchier fruit like apple or pear and one fruit that is more on the tart side like cranberries or green grapes.

Here's how to put this creation together-

Ingredients:

  • Mixed Baby greens (I used Organics brand 5oz package of mixed baby greens)
  • 1 Nectarine
  • 1 Granny Smith Apple
  • about 15 Green grapes 
  • Desired amount of poppy seed dressing (I used about 3 tablespoons of Brianna's Home Style Rich Poppy Seed Dressing)
  • Optional- Chopped Walnuts for topping
  • Optional- Grilled Chicken Breast




Instructions: Makes 4-6 large servings
  1. Chop apple and nectarine into about 1/2 inch pieces
  2. Cut grapes in half
  3. Toss fruits and greens with dressing and top with chopped walnuts if desired
There you have it, a delicious salad perfect for Spring time!
